Dal Tadka - Yellow Lentil Curry

Comforting lentils tempered with flavorful spices, staple in Indian meals.
Ingredients:
Toor dal (pigeon peas) – 1 cup
Water – 3 cups
Turmeric powder – ½ tsp
Salt – to taste
Ghee or oil – 2 tbsp
Cumin seeds – 1 tsp
Garlic – 4-5 cloves, finely chopped
Dry red chilies – 2
Asafoetida (hing) – a pinch
Tomato – 1 medium, chopped
Green chili – 1, slit
Fresh coriander – for ga ish
Method:
Wash dal and pressure cook with turmeric and water until soft.
Heat ghee, add cumin seeds, garlic, dry red chilies, and hing; sauté till garlic is golden.
Add tomatoes and green chili, cook until soft.
Pour tempering over cooked dal, add salt, and mix well. Simmer for 5 mins.
Ga ish with coriander and serve hot with rice or roti.
