Aloo Gobi - Potato and Cauliflower Curry

A simple, dry curry with potatoes and cauliflower cooked with spices.
Ingredients:
Cauliflower – 1 medium, cut into florets
Potatoes – 2 medium, cubed
Oil – 3 tbsp
Cumin seeds – 1 tsp
Onion – 1 medium, chopped
Tomato – 1 medium, chopped
Ginger-garlic powder/paste – 1/4 tsp/1 tsp
Turmeric powder – ½ tsp
Red chili powder – 1 tsp
Coriander powder – 1 tsp
Garam masala – ½ tsp
Salt – to taste
Fresh coriander – for ga ish
Method:
Heat oil, add cumin seeds till they splutter. Add onion and sauté until golden.
Add ginger-garlic powder/paste, then tomatoes; cook until soft.
Add turmeric, chili powder, coriander powder, and salt. Mix.
Add potatoes and cauliflower; mix well and cover. Cook on medium flame till veggies are tender (~15-20 mins). Stir occasionally.
Sprinkle garam masala, cook for 2 more minutes. Ga ish with fresh coriander.
